These are my favorite Fall treat on Sunday mornings!!  I like them best right from the oven topped with cream cheese.....
enjoy!!
 
Morning Muffins
 

2 Cups Flour
2 tsp baking soda
2 tsp cinnamon
1 1/2 cup sugar
1 1/2 cup shredded carrot
2 large apples ~ peeled & shredded
1/2 cup rasins
1/2 cup chopped walnuts
 
~ Stir well ~
 
Make a well in the center of this mix & combine
3/4 cup oil
3 eggs beaten a bit
1 tsp vanilla
 
~ Add to dry ingredients & stir till moist.
Spoon batter into lined muffin pans or sprayed muffin pans
 
Bake at 375*  for 18-20 mins
